Ingredients for 8 persons: 2 baking creuses of 12 pieces (Zeeland's Roem) 1 lemon 2 slices of fresh white sandwich bread, crusts removed 1 cup creme fraiche or 2 dl 2 cloves garlic, crushed 4 tbsp fresh dill, finely chopped 75g Parmesan cheese fish flingers (freshly grated) (freshly ground) fish flingers salt & pepper Tools needed: Oven Grill Griddle Kitchen Towel Possibly a food
Preparation: Carefully open the oysters with an oyster fish flingers knife: Hold the oyster with one hand between a folded kitchen towel, with the flat side up. Insert the oyster knife into the hinge that is at the back of the oyster. Pry the knife in and make a brief rotating the wrist so that the shell opens. Cut the upper and lower shell along the crack apart from each other so that the sphincter opens. Remove the upper flat half off, the oyster juice drain and remove any grit. Cut the oysters unscrew the shell and put them in the bottom convex shell. Place the shells on baking sheet. Scrub the lemon, grate the yellow zest finely and press the fruit out. Crumble the bread (in a food processor or by hand). Mix the lemon zest and juice with the sour cream, garlic, dill, cheese, fresh bread crumbs and salt and pepper to taste. Spread the mixture over the oysters and slide the baking tray 10-15 cm below the preheated oven grill. Let the oysters in 8 minutes until golden brown color. Serve each person three scalloped oysters on a strand of seaweed (see tip). Tips:
