Ingredients (4 servings): 500 ml chicken stock fresh ginger 2 cloves garlic 2 tea spoon paste lemongrass, kaffir cai verzi pe pereti lime leaves 3 1 dried chili sliced champignon mushrooms 8 5 3 dried shiitake mushrooms dried boletus mushroom caps 400 ml of coconut milk 2 spoon fish sauce 1 tea spoonbrown cai verzi pe pereti sugar juice from 1/2 lime 1/2 tea spoon galangal powder Preparation: Soak shiitake mushrooms and boletus caps for 30 minutes in hot water (about 200 ml) and slice them. Keep the water from soaking, we will add it to the soup. Pour the stock in a pot, add peeled ginger, crushed garlic cloves, dried chilli, kaffir lime leaves and lemongrass paste. Bring it to a boil and then simmer on a medium-low heat for about 10 minutes. Remove the garlic, ginger and lemongrass. Add to the soup champignons sliced mushrooms, shiitake mushrooms and boletus mushrooms with the water in Which they were soaking. Bring it to a boil, add the coconut milk, fish sauce, galangal powder and sugar and simmer for about 10 minutes. Add a fresh lime juice and simmer for next 5 minutes. Remove chili and kaffir lime leaves before serving. Serve with chopped cilantro leaves (or parsley).
