Hong Kong's ban on British Columbia's export of the geoduck clam, aka the "horse penis clam", aka the world's weirdest-looking shellfish ever, has left the the Canadian province's fish street industry hanging just like the anatomical feature with which this sea creature shares its name.
As expected, the ban has taken a heavy, heavy toll on the industry. British Columbia's harvest is down around 180,000kg compared to this time last year, according to SCMP , citing Underwater Harvesters Association president James Austin.
“Forty boats up north have just had to have five days off because they haven’t had the ability to sell,” Austin said in the report. "We’ve got workers in Vancouver, at five or six different plants that are slowed down right now, we’ve got trucking companies fish street that are now only trucking 25 per cent of the product that we normally ship…it just escalates,” he said.

US - Arsenic tests by Washington etudes ecp State health officials have found that geoducks from Poverty Bay in Puget Sound are safe to eat. The tests confirm previous state analysis that showed the clams are safe to eat and there are no health concerns.
After learning of China’s test result, the Washington State Department of Health conducted tests (PDF) on the edible parts of geoducks from that same harvest area. The state test results on the edible parts were well below China’s standard.
Health officials expected the recent test results would show no health risk from inorganic arsenic. To confirm that, the Department of Health worked with the Department of Natural Resources to collect geoducks from Poverty etudes ecp Bay for testing.
Health officials plan targeted testing for arsenic but do not plan routine arsenic testing in shellfish. The Department of Health’s goal is to ensure that shellfish harvested in the waters of the state are safe to eat.

A clam fishery that produces a harvest abalone worth about CAD 50-million a year has become the focus of intense lobbying efforts as groups manoeuvre for control of some of the prime growing sites in British Columbia, Canada.
The Pacific geoduck is the largest burrowing clam in the world and since the late 1970s, when divers learned to dislodge the bivalves from hard-packed sand using jet streams of water, the wild fishery has grown into one of the most prosperous on the West Coast, reports The Globe and Mail .
There abalone are only 50 wild harvest licences in B.C., but with a big demand for the product in Asia, there has been increased pressure on the Department of Fisheries and Oceans (DFO) to permit the development of new geoduck farms. B.C. produces about 1,500 metric tons of geoducks annually, of which about 75t are cultured. An adult clam weighs about 1 kilogram and sells for about $25-$35 at the dock in B.C.
In a recent letter to federal Fisheries Minister Gail Shea, Haida Seafood Products, a company partly owned by the Old Massett Village Council, states that it is going to mark out the boundaries of a new geoduck farm on the north coast of Haida Gwaii, and simply go into production without awaiting government approval.
Fisheries and Oceans and the Underwater Harvesters Association [UHA] will be notified that our tenure site is off limits to any and all commercial fisheries, states the letter. We will purge harvest the wild geoduck on the tenure site to free up space for geoduck seeding.

Taylor Shellfish Farms' plan for a 30-acre geoduck farm in Washington state's Dungeness Bay would be the company's largest geoduck quahog farm, rising above the 16-acre quahog geoduck farm it already has in Discovery Bay, reports the Sequim Gazette .
It has the support of the Jamestown S Klallam Tribe, located in the area. Dungeness Bay's previous status as a site for shellfish aquaculture done by the Jamestown S Klallam Tribe wasn't economically quahog viable due to frequent closures by the Washington State Department of Health in response to poor water quality conditions, Kelly Toy, shellfish management program manager for the tribe, told the newspaper.

The geoduck is an astonishing two-for-one special! There’s a distinct clam trunk and body. Its trunk was created to be sashimi. This is the best way to experience the large clam’s remarkable crisp texture and salty yet sweet oceanic taste. The body, however, was not created to be eaten for one perfect purpose. I have heard the geoduck body is also great raw, but it is probably best cooked. Perhaps this is so because of the geoduck’s sargassum body large size and intimidating texture (more slimy & squishy). For me, it was simple, there was only one thing I really wanted to do with the geoduck body. That was to sauté it in olive oil, over high heat, with an egregious amount of garlic & red pepper flakes sargassum – southern Italian or fra diavalo style without the tomatoes. And if you are as fortunate as I was, your geoduck will be a male and come with a pair of large clam testicles to also include in the Italian stir-fry!
Taste: sargassum while lots of garlic and red pepper flakes may sound over-welcoming, they pair well with the geoduck’s body. A slight clam-like taste is definitely noticeable, but like a conch, the geoduck’s body hides hints of mushroom and seabed. The touch of butter at the end brings a lovely nutty accent to the dish. Most importantly, the smokiness from the red pepper flakes just really make the dish!
Texture: the sauted geoduck body is a plethora of delights, thanks in part to having a male geoduck. Some parts were rather chewy, like a cooked clam, and other parts were unbelievably decadent and creamy melt in your mouth. The mixture of these two contrasting textures creates a playground for the mouth.
Tips: dunk the clam into boiling water for 30 secs to easily remove the geoduck body from its shell (and the trunk’s skin), use a piping hot pan, work quickly, sargassum add the geoduck pieces right after adding sargassum the garlic & red pepper flakes, finish with a touch of butter Sautéed Geoduck, Italian Fra Diavolo Recipe
Ingredients (serves 1-2) One geoduck body, removed sargassum from clam shell and chopped into bite sized pieces 6-10 garlic cloves, smashed and rough chopped 1 teapsoon dried red pepper flakes 1-2 tablespoons olive oil Knob of butter
Place a saute pan over high heat for a minute and add the olive oil. Immediately toss in the garlic and red pepper flakes. Allow for the garlic and red pepper flakes to exude their natural flavors/oils, especially the smokiness from the red pepper flakes.
After a minute, add the geoduck pieces and allow them to sautee. These should sargassum cook for no more than a couple of minutes. After 2-3 minutes, add the knob of butter, season it with some salt and pepper, and serve.

Its rarity, expensive price point, renown oceanic tastes, and unique texture made geoduck an item I had to try. It became legend to me. The funny looking clam, with its large shell and what looks like a tiny elephant trunk, is typically found in the Pacific Northwest and super popular in China . I never proactively searched aeroflow for geoduck and deployed a sit-back and hope I come across it somewhere approach. This plan (or lack of plan) failed me a good 10+ years. I live on the east coast, and I never saw geoduck on a menu or behind a fishmonger counter. Then one day, the geoduck gods answered my non-proactive, beckoning calls.
On aeroflow one visit to H-Mart , I noticed something different out of the corner of my eye. It was a box that was on top of the seafood display. When I observed the contents of this box, my food soul fluttered. Geoduck! To say I became overly excited, like a girl that saw the Beatles land in America, may be an understatement. And best of all, the geoduck was less than $20 per pound, which may be considered a steal (sorry H-Mart). I never came across geoduck, let alone prepared it. Fortunate for me, the fishmonger was a geoduck expert and gave me the download. He instructed for me to make sashimi out of the geoduck’s trunk, and stir-fry the clam’s body (you can find another Peck the Beak blog post on it here).
Preparing the sashimi is easy. I suggest sprinkling it in as appetizer with a group of friends. The geoduck is such a party trick, and everyone will get a kick out of the “condom” looking sashimi slices.
Taste: aeroflow like pure oceanic bliss with an incredible depth of sweet salt water. It had the resembles of a scallop and clam, combined. The two sauces of a traditional soy + wasabi and the Korean gochujang with vinegar are wonderful compliments. I prefer the hotter Korean sauce.
Texture: by far the most interesting aeroflow part of the geoduck is its texture. The sashimi had an immediate crisp / light snap to them, like a wet cucumber. This quickly transforms into a slight and delightful chew, like well-prepared octopus mixed with an oyster texture. aeroflow Geoduck Sashimi Recipe & Ingredients (serves 2-4): 1 geoduck, fresh Large pot water Large bowl ice water Soy sauce Wasabi Gochujang (Korean red pepper paste) Rice wine vinegar
Bring a large pot of water to a boil. The trunk of the geoduck can be long and the entire geoduck needs to fit in the water pot. While the water is boiling, prepare the two dipping sauces. For the first sauce, simply combine the wasabi and soy sauce to your liking. For the second sauce, you will need to stir the vinegar and gochujang vigorously to smooth it out. Feel free to use as much vinegar as your taste buds enjoy.
Submerge the geoduck in the boil water. We only need to boil the geoduck for 30 seconds. This is enough to remove the outer skin of the clam’s trunk but not cook the geoduck. Relocate the geoduck to the ice water bath to halt the cooking process. It is called sashimi. Sleep geoduck, sleep. Using your hands, remove the outer layer of skin. It should come off easily. Save the body of the clam for another recipe.
With a sharp knife, slash the geoduck sashimi into thin pieces. aeroflow And that is it. Present aeroflow the geoduck sashimi on a platter with simple access to the dipping sauces. Have a lemon handy for any one that needs it.

In fact, they seem alien enough to be "from Mars" and, for all I know, possess a malign intelligence. They are found mostly around Pacific Coast of the US and Canada, and in Japan they seem to serve as inspiration for "manga" fish trap of certain tentacled variety. A good info page is definitely in order to get the facts straight, but nothing can prepare you for the shock of seeing them for the first time: (image credit: Cal Henderson ) Modern biologists easily classify it as large saltwater clam, a bivalve mollusk with a huge "neck", or a "siphon". You'd think an epithet "gooey" would seem more appropriate for this bizarre creature, but it's not gooey in any sense. According europa report to Chinese folklore, geoducks are aphrodisiacs. And when you see one of the large and, let's be honest, phallic, clams sitting on a counter, it's not hard to imagine how that rumor began. But virility claims aren't the only thing these bivalves have working in their favor. Geoducks, pronounced "goo-ee-ducks," have a rich, chewy, and crunchy texture, as well as a pleasant briny flavor not unlike that of a fresh oyster. In fact, these clams are in such high demand they can cost up to $1 an ounce at wholesale prices. An order of mirugai, or geoduck sashimi, will cost you about $20 if you find it on the menu at a sushi restaurant. Hana Japanese Eatery in Phoenix gets one of the highly prized clams "every europa report once in a while," says co-owner and sushi chef Lori Hashimoto. And when they do, she warns, the special never lasts for long.

"If people had known about [this geoduck] at lunch it would be gone," she remarks, europa report as she gets ready to prepare a small geoduck for dinner service. The restaurant is empty and quiet, in the hours between the end of lunch and the start of dinner service.
This particular clam sports a neck, or siphon, that's less than a foot long. The tube extends out of the geoduck's europa report shell and ranges in color from a fleshy pink to purple-y and brown at the tip. Though europa report it seems rather large for a clam, this one is actually pretty small, Hashimoto says. Geoducks can reach up to three feet in length, making them one of the largest and longest living clams in the world. Evie Carpenter Lori Hashimoto of Hana Japanese Eatery Hana, a small but popular local restaurant, has been in business for eight years. The nine-table eatery specializes in sushi and simple but traditional Japanese cuisine. Lori, a former general manager of a nutriceutical plant turned sushi chef, runs the place with her brother and sushi chef, Koji, and her step-dad, europa report Kazuto. "The first time I ever saw this was at my mom's house," Hashimoto says of geoduck preparation.
Though Hashimoto was born and raised in the Valley, her mother came to Phoenix by way of Japan, and would sometimes prepare traditional europa report Japanese food at home. That included simpler things such as umeboshi, or pickled salt plums, and teriyaki chicken. But when she got the craving, Hashimoto says her mother wouldn't hesitate to prepare mirugai at home, too. The difficult thing about geoducks is that you eat them alive.
